In the fall semester of 2005, theVines to Winesclass at West Virginia University filled up almost the day it was announced. In 2006, more students will get an opportunity to learn about the wine-making process.
Vines to Wines(HORT 293) examines the wine-making process, from the vineyard to the table. It will be offered again in the Fall of 2006, with twice as many spaces available.
The course was developed by Todd West, assistant professor of horticulture in WVU ’s Davis College of Agriculture, Forestry and Consumer Sciences.
West suspected the course would generate interest, but even he was surprised by the demand for enrollment. He immediately began working to enlarge the class roster, doubling it from 30 to 60.
In the course, West introduces students tothe practices of grape growing and the making, using and appreciation of wine by acquiring an understanding of the principles underlying present-day grape and wine production with special emphasis on origins, botany, historical and cultural significance of the grapevine and related species.
Topics covered in the course include wine’s cultural impact on civilization, an examination of various varieties of grape and the wines they produce, and various elements of tasting and pairing wine with food. The course’s syllabus includes a visit to a local restaurant to examine both consumer and retailer perspectives on the beverage.
Vineyards and wineries are on the rise across the United States , including West Virginia , and are becoming popular attractions for tourism and cultural events,said West.This course gives insights in the history, production, use and evaluation of wine including a look at West Virginia and regional vineyards and wineries.
West said the courseis perfect for someone who is interested in either agriculture, hospitality management, or simply wants to expand their knowledge of wine.
The course is open to all WVU students who are 21 years of age by Sept. 1, 2006. It will meet from 6-6:50 p.m. Tuesdays and Thursdays for lecture sessions (CRN: 85520), with a laboratory session from 7 to 9:15 p.m. on Tuesdays (CRN: 85521 or 86590).
